Looking for a tasty new way to serve cranberries this year? Here's a cranberry salad contributed by Paula Swearingen, LPEF board of directors member, that can be found in Bone Appetit:
Ingredients:
2 small packages strawberry Jell-o
1 cup frozen strawberries
1 small can crushed pineapple
1 1/2 cups fresh cranberries
1 cup hot water
1 1/2 cups pecans
1 cup sugar
Chop cranberries in half and mix with sugar. Set aside. Mix strawberry Jell-o with hot water. Mix thoroughly. Chop frozen strawberries and add to Jell-o mixture. Thoroughly drain crushed pineapple. Add to Jell-o. Chop pecans and add to Jell-o mixture. Add cranberries with sugar and mix thoroughly. Refrigerate overnight.
